Cold Smoked Spotty Mackie pasta with burnt lemon

Cold smoked Spottie Mackie pasta, burn lemon, Croutons, roasted potatoes, cherry tomatoes, red onion, olive oil and dill

Italian masterpiece, so simple!


Ingredients

300 g  thinly sliced 24 hour dry cured cold smoked Spottie Mackerel  (or Spanish mackerel, tuna, kingfish)

Al dente pasta of your choice

Olive oil

sweet sun ripened cherry tomatoes

Bread Social sourdough bread, panfried into buttery crunchy croutons

2 potatoes

1 jumbo Ballina King Prawn, only if you really want to impress

½ red onion sliced

3  fresh lemons

sprigs of dill

Flaked salt

Cracked black pepper


Method

Slice cold smoked mackerel, removing skin  (for an epic twist, char mackerel fillet on super hot BBQ for 30 sec each side, just to get a sear, then slice) 

Oven roast potatoes and lemons, generously salting and olive oil in very hot oven.  Lay lemon slices on oven pan so they caramelize/burn.

Cut lemon into small pieces, and its flavor is strong.

Combine all ingredients 

squeeze of fresh lemon juice, and a little zest if you like!

Generous coarsely ground black pepper (optional use Tasmanian Mountain Pepper!)

Flaked salt

Top with sprigs of fresh Dill
